That’s definitely possible, though imho it’d get convoluted pretty fast, as a significant part of the blood of vol’s creation (depending on your edition iirc) is that erandis vol can’t access her apex dragonmark as a lich, so if undead can use dragonmarks it takes away a lot of motivation for her schemes. Having played through all 3 dark souls and bloodborne, i can actually say the only instance of vampirism i've seen is cainhurst castle in bloodborne, an optional area that is easily missed, but there are no vampires there except the vilebloods, whom were all killed by the healing church years prior to the game.
